Although difficult to do, and takes a very long time to get competent at, I have been able to use both Ikkyo, and Nikkyo from my back to create space and roll over to pin my partner. We also use space and distancing techniques. Aikido is quite limited in its ground defense, but we do have a couple tricks, lol.
Being on top, one could use Ikkyo, Nikkyo, Yonkyo, pretty much any of the immobilizations.
Dont get me wrong, If I was purely aikido, I dont think I would want to willingly go to the ground with a grappler
