there would be no official writting of it once translated because jiu and ju are both correct in their own way.......... you have to know about about hiragana to get this..... the character for JU is the character SHI (looks like a backward J) with little " marks to turn the pronunciation to JI... then next to that you have the character for YU, but smaller to show it is a add on to the character not a new character, which modifies JI to the sound JU..... so personally i think that JU is correct, but i can see the argument for JIU.... but if you do use JIU keep in mind that then stuff like tea O-CHA should really be O-CHIA.... which no one does.

There is, actually, an official way to write in romanji everything in hiragana. People saw stuff like how we spell jujitsu and figured it would be a good thing to have a standardized system, especially since the Japanese started learning English as a matter of course, and started using romanji more often.
So what they did is they broke everything down into series of two and three letters. Each symbol, each tsu, everything can easily be rendered into romanji, rather than trying to spell things phonetically (although it does end up being written phonetically )

that is really neat! i thought it would make sense if there was a standard, i have just seen so many translated variations that i assumed there was no standard

Yeah, unfortunately, most people stick with what they first learn, and pass that first learning on to their students.
I know many black belts who use Japanese words but aren't pronounced correctly. A common one is pronouncing "iaido" "ai-ay-do". The damage was done before a standard was developed, and will linger for a long time.
